A veteran of Ojang-dong's cold-noodle street, serving the Hamheung style. Thin noodles made from potato starch are so chewy you'll want the scissors. The star is hoe-naengmyeon, piled with skate marinated in a sweet, fiery sauce. You mix and eat, sipping the hot beef broth that comes on the side between mouthfuls. The polar opposite of mild Pyongyang naengmyeon.
