The menu is basically one dish. Yuba, the skin that forms on simmering soy milk, made with Hakone spring water, is cooked in bonito broth, softly set with egg and brought in a single clay pot to spoon over rice. Gentle, piping hot and just right for a late breakfast in an onsen town. When it's busy they take your number and phone you, so you don't have to stand in line.
