Look for the pig in a red apron on the sign. This is the miso katsu flagship: pork cutlet under a sweet, dark sauce built on Hatcho miso. The signature teppan tonkatsu lands on a scorching iron plate over cabbage and gets its sauce poured at the table. The plate-overhanging waraji (straw sandal) cutlet can be ordered half miso, half regular sauce.
