Taiwan ramen doesn't exist in Taiwan; it began as this shop's staff meal and became a Nagoya dish. Chicken-bone broth topped with a mound of mince fried with chilli and garlic: one sip and your lips buzz. The 280-seat hall fills every night and food lands fast. The usual order adds garlicky stir-fried greens and sauce-simmered wings.
