Opened as a ryotei in 1873, and the word hitsumabushi is literally this shop's registered trademark. Eel brushed with a never-emptied sauce is grilled over binchotan, chopped and laid over rice in a round wooden tub. Eat it plain, then with green onion and wasabi, then drowned in broth as ochazuke: the routine took shape here. The main shop is an old ryotei with a Japanese garden, an easy pairing with Atsuta Shrine.
