Hainanese chicken rice: rice cooked in chicken stock, sliced poached chicken, and ginger and chilli sauces to dip. The name dates back to 1938 and locals know it well. According to the Michelin Guide there are two birds to choose from, a leaner, firmer one and a fattier, softer free-range one, and crisp-skinned roast pork belly is another bestseller. Add a plate of crunchy Ipoh bean sprouts and you're done. It's right in Chinatown, easy to drop into on foot.
