A dim sum chain counter inside Hong Kong Station, surrounded by people wheeling airport luggage. It made its name in 2010 when the tiny original shop in Mong Kok won a Michelin star; now there are branches worldwide. The headline item is the baked char siu bun with a sweet, crumbly crust like a pineapple bun. You tick quantities on a paper menu, so ordering needs no shared language. Note: this branch isn't Michelin-listed; the Bib Gourmand for 2026 went to the Sham Shui Po branch.
