A small counter among the butchers on the market's ground floor. They slice slow-boiled lampredotto (the cow's fourth stomach), pile it into a round roll and spoon over salsa verde. Tripe fans fall for it on the first bite; the nervous can start with the boiled-beef bollito sandwich. You eat standing at shared ledges next to market workers.
