Xiyangshi street, Lianhu, the Muslim Quarter's western branch

Small, sweet persimmons from nearby Lintong are mashed into dough and fried on a griddle. The outside crisps, the inside goes chewy, and the filling is osmanthus syrup with walnuts or sesame. From late autumn into winter, when persimmons ripen, rows of flat orange cakes sizzle on griddles all along the Muslim Quarter. One makes a perfect walking dessert.
