The owners learned soup dumplings from a Shanghainese chef more than 20 years ago. Pork hind-leg filling in a plain flour-and-water wrapper: nothing fancy to look at, but flavourful and not greasy, says Michelin. If you like heat, add the spicy stinky tofu topped with minced pork, dried shrimp and chili. It feels like a neighbourhood canteen, not a showroom.
