A short step off the main Yongkang Street drag, this noodle house keeps its broth going around the clock. Beef shank is braised four to five hours until it turns caramel brown. The signature bowl is a dark red, doubanjiang-scented soup with a faint spicy finish. Noodles are thick and chewy, and the meat falls apart along the grain.
