Of Siji Minfu's Shanghai branches, this is a favourite with visitors. It's on the third floor of Hong Kong Plaza's North Tower, between Xintiandi and the Site of the Provisional Government of the Republic of Korea, so it drops easily into that day. Rows of glossy ducks hang behind the glass at the entrance, and inside the lighting is low and the staff plentiful, more hotel restaurant than duck hall. A chef carves at a trolley near your table, then a server rolls the first pancake to show you how. Many diners pair the rich skin with the pea-shoot salad piled with crisp shredded potato.
