A trapizzino is a thick triangle of pizza dough split into a pocket and filled with Roman home cooking: chicken cacciatora, meatballs in sauce, tongue in green sauce. Pizza maker Stefano Callegari invented it at his Testaccio shop in 2008; now there are branches all over Rome. The Piazza Trilussa shop sits right where Ponte Sisto lands in Trastevere, a natural start to an evening there. Around €5 each, it's eaten one-handed on the move.
