In the lane beside the Pantheon's columns, a small trattoria the Gargioli family has run since 1961, now in its third generation. Tourist central, yet the menu is pure Roman: tripe, offal and grilled lamb sit next to the carbonara. On the May 2026 dinner menu carbonara, gricia and amatriciana are €16 each, plus a €3 cover. The menu warns that pasta takes 25–30 minutes.
