There's nothing to choose. You sit down, a green salad with walnuts arrives, then thin slices of contre-filet drowned in a mysterious greenish butter sauce, with a heap of skinny fries. When your plate is nearly empty the server comes back with the rest of the meat, kept warm in the meantime. The formula started at Porte Maillot in 1959; the founder's daughter built this chain from it, and there are four branches in Paris. It pairs well with a coffee at Café de Flore around the corner.
