Fifty years of nothing but Nagoya Cochin, the local heritage chicken. They use only same-morning purebred birds, and the signature is the Cochin hotpot they say they popularised: miso broth with chicken, meatballs, Cochin eggs, mochi and ginkgo. Every course includes a chicken sashimi platter, swappable for steamed chicken if raw poultry puts you off.
