Msemen is a Moroccan flatbread: dough stretched paper-thin, oiled, folded into a square and cooked on a griddle. Flaky layers outside, chewy inside, eaten with honey, butter or amlou (almond-argan spread) and mint tea; that's breakfast here. Around Bab Doukkala market, in the quieter northwest of the medina, griddles come out every morning for msemen and spongy baghrir pancakes. When the dough runs out, usually before noon, they pack up.
