A few steps down from the street, under the walls that hold up Plaza Mayor, is a brick-vaulted cave of a bar. Since 1964 it has been about one thing: griddled mushrooms, caps turned up and filled with garlic, parsley and a bit of ham, each speared with a toothpick. The house rule: one toothpick in each hand, whole cap in one bite so the juice doesn't spill. Pair it with the house sangria, then move on.
