Baking custard tarts since 1837 from the Jerónimos monks' recipe, this is the only place allowed to call them pastéis de Belém. The shell shatters like a biscuit and the custard is less sweet than elsewhere, so you add cinnamon and icing sugar yourself. The queue out front looks long, but the takeaway line moves quickly and the table line leads into a warren of rooms that swallows people fast. Eat them warm under the blue tiles.
