A ramen shop built on seafood dashi (bonito, sardine and kombu) rather than pork bones. The two staples are 'shiro', with pale white soy, and 'kuro', with dark soy, and bonito is shaved fresh for each bowl. The chashu is thin and slow-cooked, the broth almost oil-free; reviewers who like Pyongyang-style cold noodles tend to love it. It has been a Michelin Bib Gourmand in Kyoto several times, and a separate annex, Hanare, serves wagyu ramen nearby.
