Glutinous rice is packed over braised minced pork in small metal tubs, steamed, then flipped onto a plate and sauced. You get a neat little cylinder to break apart with chopsticks. Michelin suggests a soy-braised 'iron egg' and the spongy steamed egg custard soup alongside. It's on Michelin's Bib Gourmand list.
