Samatya is a quiet district on the Marmara coast, and Develi, founded in Gaziantep in 1912, moved here in 1966. Plates arrive with plenty of parsley, onion and pomegranate syrup beside the meat. Its çiğ köfte (spiced raw-meat-and-bulgur mix) and pistachio kebab are the best-known orders. Families fill the big tables first at weekend lunch.
