The Hong Kong outpost of the Mak family, wonton noodle royalty from Guangzhou. The old-school bowl is small: a spoon at the bottom, noodles on top of it, wontons on top of those, so the noodles don't go soft in the broth. It's endlessly compared with Tsim Chai Kee across the road; Mak's costs a bit more, has a longer menu and takes cards. The broth is clear and flavoured with dried flounder.
