A neighbourhood stall selling bún bò Huế, the spicy beef noodle soup from central Vietnam. Beef and pork bones and onion make the stock, lemongrass and chilli oil float on top, and round, thick rice noodles come under sliced beef, tendon and fish cake. Add bean sprouts, chilli, lime and fish sauce to taste. It's heavier and punchier than phở. Bib Gourmand 2026.
