Rabbit head is what Chengdu gnaws with a beer, by hand. Shuangliu's 'Laoma' style is the best-known name, and reviews keep saying 'look for the 老妈兔头 sign'. Choose mala (numbing-hot) or wuxiang (five-spice, milder), pull on plastic gloves and work out the cheeks and tongue. From the side it looks like pig's trotter, but face-on you see the teeth, and some diners give up on looks alone. It's handy after visiting Wenshu Monastery.
