A tiny herring stall on the bridge where the Singel canal begins, a few minutes from Centraal. They clean each fish to order and hand it over with chopped onion and pickles. The Dutch way is to hold it by the tail, tip your head back and eat it whole; if that's too much, start with a 'broodje haring' in a soft roll. From late May into summer the new-season 'Hollandse Nieuwe' is fattier and more buttery than salty. Smoked eel is on offer too.
