Open since 1920, this is one of the names people mean when they say Xi'an paomo. Its lamb paomo is on China's national intangible-heritage list. You tear a hard flatbread into pea-sized crumbs yourself, hand the bowl over, and it comes back swimming in hot broth. It sits beside the Bell Tower, so it slots into a walking day easily, and there are several floors of dining rooms.
