A Shaanxi-cuisine institution since 1929. The star is hulu ji, gourd chicken, boiled, steamed and then fried until the skin crackles and the meat stays soft. In winter, warm up with choujiu, a thick rice wine said to have been Consort Yang's favourite. Branches at Datang Everbright City, Huaqing Pool and elsewhere make it a regular on package-tour menus.
