The character 'biang', said to need more than 58 strokes, is spelled out in gold on the sign. Climb to the first floor and a terracotta warrior statue guards the door under a ceiling of paper flowers. Pay at the counter first, take a numbered receipt, and staff carry out the huge bowls calling numbers. Wide, chewy noodles topped with chili flakes, scallion and garlic, then doused in hot oil, turn out milder than they look, a bit like a ragù pasta.
