A Hui family named Sun opened this paomo house at Duanlümen in 1898. You're handed a hard flatbread and asked to tear it into pea-sized bits; the bowl goes back to the kitchen and returns simmered in lamb broth. Tear too big and the pieces swell like dumplings, so take your time. Eat it the Xi'an way, with sweet pickled garlic and chili paste on the side.
