Chef Hidekazu Tojo has run a sushi bar in Vancouver for decades. The place is tied to the inside-out Tojo Roll, which is often named in the argument over who invented the California roll. At the sushi bar the chef builds an omakase from that day's fish. It is a splurge dinner, and reviews are mixed enough to be worth reading first.
