Down a flight of stairs in a central Ginza building, a long counter faces the charcoal. Okukuji shamo chicken from Ibaraki is grilled skewer by skewer over Kishu binchotan, opening with a chicken liver pate and running through the cuts one by one. It has sat in the Michelin Guide for years, and the price runs high for yakitori. It is right next to Sukiyabashi Jiro, so finding it is easy.
