French chef Joannès Rivière builds tasting menus entirely from Cambodian market produce, and they change with the seasons and his mood. No à la carte, dinner only, served in a wooden Khmer house on stilts. The fruit desserts and chilli-salt tropical fruit plate are what end up on everyone's camera roll.
