Fifth floor of the No.1 Department Store's Building B, right where the East Nanjing Road walking street meets People's Square. It opens at 10 a.m. and keeps the burners going until 7 the next morning. Staff hand out aprons and hair ties as you sit down, and order the hand-pulled noodles and someone puts on music and swings the dough out beside your table before dropping it in the pot. Fruit at the sauce bar keeps changing through the night, and several diners mention a little bag of snacks pressed into their hands on the way out. Haidilao is a chain with plenty of branches in Shanghai alone (the Bund branch at 123 East Nanjing Road and the Shimao Plaza one are close by), but this is the one visitors mention most.
