In Sapporo, a night out can end with parfait instead of ramen. This sixth-floor spot is one of the places that started the 'shime parfait' craze. Seasonal fruit, gelato, crunchy meringue and sauces are stacked so the flavour shifts as you dig down. Some parfaits carry a dash of liqueur, and you can pair one with whisky or a cocktail, bar-style.
