Pork trotters, chicken and vegetables simmer for more than ten hours into a clear broth, which then meets thick, curly noodles. For a miso ramen it feels surprisingly light, and plenty of people finish it after a night of drinking. It opens until 3 am on weekdays and 2 am on Sundays and holidays, so late-night queues are a familiar sight. There is no regular closing day, which makes it easy to fit in.
