Salzburger Nockerl is a baked egg-white soufflé; Herzl's menu says its three peaks stand for the Mönchsberg, Kapuzinerberg and Rainberg around the city. Herzl is the restaurant of the old Goldener Hirsch hotel and is Michelin-listed. White vaults, parquet floors, Austrian classics, and Nockerl for dessert. It's baked to order, so ask for it when you sit down.
