Walk into the Century Hotel lobby, keep the front desk on your right, and you're in a plain neighborhood diner; there's barely a sign, so first-timers walk right past. Most visitors order the beef short ribs with garlic rice, or crispy pata, a Filipino-style pork hock fried until the skin cracks like a chip.
