Gabriele Bonci's pizza al taglio counter. Long trays of airy, slow-fermented dough under seasonal toppings line the glass; point, he snips with scissors, and it's weighed and priced. No tables, just a ledge and the pavement. Ten minutes on foot from the Vatican Museums and two from Cipro metro, it fits neatly before or after the museum queue.
