Dương Đông's night market opens around 6 p.m. Both sides of the lane are lined with seafood stalls, urchins, scallops, prawns and squid laid out on ice; point and they go straight on the coals. The island speciality is nhum nướng mỡ hành: split sea urchin topped with scallion oil and roasted peanuts, grilled, then scooped out and dipped in lime-pepper salt. For afters there is rolled griddle ice cream, and bánh tráng nướng draws its own queue.
