The shop for bún quậy, a noodle soup you only find on Phu Quoc. When you order, the kitchen pipes raw shrimp-and-fish paste straight into the bowl and pours boiling broth over it to set. The broth is clear and mild; the real flavour comes from the dip you mix yourself from salt, sugar, calamansi and chilli at the table. It is self-service from paying to carrying your bowl, which feels chaotic at first, but staff will show you the ratio.
