Every time a batch leaves the oven a bell rings, and the queue outside swells on cue. The cake is soufflé-light, so the box wobbles in your hands. Raisins soaked in house syrup line the bottom. If you are picturing a dense New York cheesecake, this is closer to sponge. Upstairs, Riku Café ROOM serves it warm with coffee.
