1-12-15 Nishinakajima, Yodogawa-ku

Opened in Nishinakajima in 2012 with a name that translates as 'all humans are noodles'. The shoyu broth smells of bonito and stays clean rather than greasy or salty, and the chashu is so thick it pulls apart in strands when you nudge it. Three bowls form the core: shellfish-based 'macro', soy 'micro' and the bonito-forward 'Genten' (the original). There is always a line, but it tends to move; seating within about ten minutes has been reported.
