Agu is Okinawa's heritage black-pig brand, with sweet fat that doesn't cloy, and the usual way to eat it is sliced thin for shabu-shabu. Here the courses lay out four Agu cuts on one plate so you can swish each through the broth and compare. It's on the 5th floor of a building at the east end of Kokusai-dori, so dinner rolls straight into a stroll. Private rooms make it easy for families.
