A modern Filipino kitchen that opened its first branch in 2002. Its famous corned beef sinigang was an accident: chef Vicky Pacheco found a corned beef broth meant for an Irish-style dish too salty and tipped in tamarind. The beef is cured in-house for three to five days, which keeps it pink, and press reports describe staff letting you taste the broth so the sourness can be adjusted before it reaches the table. The oxtail kare-kare also sells well. Branches today: Greenbelt 5, One Bonifacio High Street (BGC) and Capitol Commons (Pasig).
