A mackerel-sushi house founded in 1781. Fatty mackerel goes whole onto the rice and is wrapped in Hokkaido kombu; sliced, the cross-section is shaped to look like a hare, a nod to the founder's name, the shop says. Takeaway gifts were always the main trade, and the seats began as a spot to nibble while your order was packed, so it's sushi only, no soup or sides.
