Kobe dips its gyoza in miso sauce, not just soy, and this is where that started. Founded in 1951, it sets out a secret miso dip that you loosen with vinegar and soy to taste. The dumplings are fried in peanut oil for a crisp base, and the shop says a little A5 Kobe beef goes into the filling. Besides pan-fried gyoza there are boiled and deep-fried ones and jaja-men noodles.
