It started as a street stall, and even after expanding it still feels like one. Pick between a beef-bone stock simmered for three days or chicken broth; the headliner is phở bắp hoa with medium-rare beef shank. The joke dish is 'Phở-tine', a nod to Canadian poutine with phở beef, fries and cheese. The broth is northern style, clean, its sweetness coming only from the bones. Bib Gourmand 2026.
