On a street corner by the canal, one dish from early morning: bún riêu. The tomato broth is reduced slowly, a little sweet and mildly spicy. The paste on top is shrimp, pork and egg instead of crab, and you pick thin, thick or flat noodles. Fried tofu is the usual side. It earned a Michelin Bib Gourmand in 2026.
