Over sixty years of steaming rice rolls on the same spot. Thin sheets are rolled around minced pork and wood-ear mushroom, then a slab of hand-pounded squid cake is sliced alongside. Dip it all in warm fish-sauce broth and that's breakfast, Hạ Long style. It's a cramped room and packed every morning; plenty of people just buy squid cake to take home.
